Seetha's Peri Peri Chicken
Heya! Ready for a spicy hot peri peri grilled chicken?? ;)
Well.. I visit Nando's Restuarant quite very often ..yes! you guessed it right.. its for the peri peri chicken. I love it soo much that ..going there very weekend was too costly for me. well, since i flavor the taste so much ..i thought i should be able to try it out myself.
Its the perfect peri peri marinade which makes all just blend in to make this fabulaous spicy kick to it. Also, aging the marinade allows the flovour to develop.
For the marinade:
3 fresh hot chilli peppers chopped
4 tbsp lime juice
4 tbsp oil
1 tbsp dried red pepper flakes
1 tbsp red chilli powder
1 tsp garlic powder
1 tbsp paprika powder
1 tsp salt
dried or fresh oregano or parsley
400g chicken with bone. (Washed and chopped into 4 chunky pieces to grill)
- Combine all ingredients. Grind and mix the ingredients into a smooth paste.
- In a large bowl, stir together the paprika, chili powder, lemon juice, garlic, ginger and salt. Rub chicken with the mixture, place in a dish, and marinate for 3 hours. (marinated Overnight is better)
- Preheat a grill for medium heat.
- Place chicken onto the grill.
- Cook for about 30 minutes, turning occasionally, until the skin is slightly charred and juices run clear.
