EGG Masala

Have you ever had one of those days where your so tired and lazy to cook .. and there is nothing else in the fridge except eggs?? And the first recipy that comes to your mind when you see eggs is .. omelette? Well ..I did! And this time I wanted to make something spicy and flavoursome with the eggs. Heres what I did..


Ingredients:
-6 eggs
-small stem of cinammon,
-4 cloves
-4 cardamon
-1 tsp ginger garlic paste
-2 medium size onions chopped
-2 medium sized tomatoes chopped
-2 stem curry leaves
-1/4tsp termeric pwdr
-1tsp chilli pwder
-1tsp corriander pwdr
-1-2 reen chilly(optional)
-corriander leaves (to garnish)
salt

Method:

-Boil water and simmer the Eggs for about 6 mins. (do not simmer for more than 10 mins)
- Peel eggs shells, cut in half and keep aside

For the masala:

- In a hot pan add oil
-add cinnamon,cloves,cardamon
-Add chopped onions,green chilly and curry leaves cook for 1mins
-Add tomatoes and Cook for 5mins
-Add termeric, chilli, ginger/garlic paste, corriander powder and salt to taste.
- Mix well cook for another 3mins adding a little bit of water and stiring consistently

- Add the boiled Eggs and blend in the masala over it gently without damaging it.
- sprinkle some corriander leaves on before serving

There you go.. spicy..easy-pease egg masala!

Sweet & Sour Aubergines


Aurbergines are one of my favourite vegetables. I had bought 2 large aubergines yesterday and kept it refrigrated until I could think of something special to make out of it. Then I came across my favorite cook's tv programe last night..'Floyd's India'.. none other than Mr. Kieth Floyd. In the enthusiasm of learning a new recipe from my cooking guru .. I tried out this recipe and it turned out absolutely fantastilious!

Ingredients

2 red onions
2 tomatoes, finely chopped
about 20 fresh curry leaves
300g Aubergines (remove stalk and cut cube sized)
2 tablespoon coconut powder
1 tsp chilli pwder
1 tsp coriander pwder
1/2 tsp turmeric pwder
100g tamarind puree
salt
chopped fresh coriander leaves,to garnish

- Heat some oil and saute the onions until they are completly soft.
- Add the tomatoes and continue to cook adding a little water until you have a think gravy.
- Stir in the curry leaves
- Shallow fry the Aubergines in some oil in a separate pan until they are semi cooked.
- Blend in all the other ingredients and add it to the onion gravy. season with salt.
- Cook for 3mins,mixing well, then add the semi-cooked aubergines.
- Simmer gently for about 20mins.
- Garnish with fresh Coriander leaves and serve.
