ChocolateChip Bread Pudding



To be honest, I never liked puddings all that much..so I never got around to making one. The only pudding I have ever enjoyed is my mum's 'Jagery Pudding' (I will upload this recipe later). I must say, my mum's an expert when it comes to puddings! After the multitude of dinner parties at my house, she has ravished her guests with quite a varity of puddings.

Its very rare we even think of cooking dessert for ourselves. I guess its the hassel of making sure you have all the rich ingredients or the long tedious process of making one.
Wouldn't it be just lovely if you had a simple dessert recipe which is easy peasy and you could turn into a dinner party treat?!

I have made this pudding twice now. It looks exquisite and tastes heavenly!







Ingredients:

1/2 loaf of bread (eg. view picture)
Butter (Just enough to butter the oven dish)
3 eggs
1/2 liter full fat milk
125ml double cream
40g brown sugar
100g chocolate chip
2tbsp liquor (rum)
2tbsp demerara sugar(optional)

Method:

  • Pre-heat oven to 170
  • Butter up an 23cm Oven proof dish.
  • Cut the bread into cube size pieces and put it dish spreading it evenly
  • Scatter in the chocolatechips
  • In another bowl mix in the milk, double cream, eggs, brown sugar and rum.
  • Whisk this custard mixture thoroughly
  • Pour this custard mixture over the bread cubes in the dish
  • Leave the bread to soak for about 20mins before placing it in the oven
  • Sprinkle the demerara sugar evenly on top of the pudding
  • Place the pudding in the oven for about 40mins
Voila!! Enjoy!
