Thairru Saadam tiffin

I share this recipy with all the rice lovers out there. Its a basic and simple dish which will keep you refreshed and relaxed after a hard day at work.
Its said that .. in South Indian home cuisine, it is standard to eat curd rice at the end of lunch and dinner, which helps ease the effects of the spicy main dishes. It is also said to aid digestion.

I would like you to try this recipy and I await for your feedbacks.



Ingredients
2 cup of rice
1/4 cup of milk
1 cup of yogurt

seasoning:
1/4 tsp Urad dhal
1/4 tsp Mustard seeds
1/4 tsp Cumin seeds
pinch of asafoetida
1 long finely chopped green chilli
1/4 tsp finely chopped ginger
1 stem of curry leaves

Garnish with corriander leaves

Method
Boil the rice so that it breaks down, becoming almost like a paste. Bring it to room temperature.

Season with urad dal, mustard seeds, cumin seed asafoetida..along with fried finely chopped green chillies, ginger, and curry leaves.

Finally, add milk, yogurt and salt to taste. Fold the yogurt n milk evenly into the rice

Its a great combinaton when served with mango or lime pickle.
I prefer curd rice.. when served chilled.

Thainara Appams for the Soul


Homemade traditional pancakes made using claypots. Thainara appam is a malayalam word and can be translated in english as Honeyhive Pancakes. As you can see it definitly look like one. Its socked in sweetened coconut milk.. which makes it sweet n mouthwatering. :)


Its my all time favourite which I have often when i go back to my hometown Edamuttam,Thrisur, Kerala.
Its a recipy that my mom makes me and instantly steal my heart away! :)

Its a Tea/coffee time snack and you too can steal hearts of any guests who suddenly turn up at your door unexpected for tea.

The main different and the most impatient part in making these is that it is made using a curved clay pot. You need to prepare the pot first or it could be a pain n the neck when you actually start making the appams.

(Important!!) Prepare the clay pot :
  • Wash with plain water.
  • Heat pot on stove to high heat with some tamarind water and bring to boil.
  • Let it simmer for 15-20mins.
  • throw the tamarind water away and wash pot again with plain water.
This method is done first so that the appams will come off easily from the pot when cooked. Kind of makng it non-stick pot. You can use this clay pot for making future thainara appam.

Ingredients:

500g plain flour( maidha flour)
2 eggs

Beat flour and eggs together and add water constently to get a smooth constancy of the batter
Add a pinch of salt. Blend using a egg beater so that the batter bubbles up.

Heat the prepared claypot to high heat. Make sure its seething hot. Apply the a small amount of batter on to the center of the pot spread the batter with a gentle circular movement so as to get the bubbles to form on it. The bubbles will burst as the appams get cooked and it makes it look like a honeyhive. The more bubble appear the more tiny holes it makes.
Once cooked scoop out the appams using a flat metal spoon. Make a few palm sized appams and keep aside to cool.

For the sweetened coconut milk:

1 cup grated coconut. Blend it in a mixy or juicer and extract the coconut milk. Add 4-5 tbsp of sugar and dissolved it in the coconut milk. Add a pinch of salt.

Now your Appams are Ready.. and your sweetened milk too!

Soak the appams in the coconut milk and serve on plate.

Kerala style Karimeen Fry

Karimeen is the malayam term used for Pearl fish.
Its quite difficult to find pearl fish in Uk fish market.. so here in this picture i have used pomfret fish instead.

This is my first attempt at it and it turned out absolutly delicious! Hope you all try it and as usual waiting for your feedback.

Karimeen (pearl Fish) - Cleaned and washed

Make several incisions on the flat part of the fish for better marination.

For marination:

Chilly powder-1 tsp
turmeric powder-1/2tsp
ginger paste-1/4tsp
garlic paste-1/4tsp
Shallots - 4
pepper powder-1/4tsp
salt to taste

For fry:
Oil to fry
ginger 1/4 tsp choped
garlic -2 cloves crushed
Curry leaves - 1 spring

Grind all ingredients with little water to make it into a paste.
Marinate the fish with it.
Keep aside for 20- 30mins

In hot fry wok.. Add oil.
Add ginger, garlic,curry leaves. When it turns brown slowly dip n the fish to fry.
Fry well till the fish is done. Scoop it out and serve on platter granished with greenchillies..Onion slices and curry leaves.

Petit Gateau

Hey Chocolate lovers.. Im cooking up the most famous chocolate lava cakes this winter ...again! yep! I made this last year ..now i am addicted. Seriously..i cant think of any other dessert except lava cakes! lol! So I thought I should share it with you guys..

WEll..ofcourse there are several versions of it. This is my version cause i make it with extra chocolate and i just love the chocolate oozing out when you cut the gateau open.



Ingredients
:
150g sugar
125g flour
125g butter
4 eggs
50g coco powder
400g dark chocolate bar
1tsp vanilla essence

-Butter up 6 cupcake rumkins
-Preheat oven to 180*c
-Whisk egg and sugar till it becomes a foamy texture
-melt the chocolate bar and butter using microwave or other traditional methods (just melt..do not over heat or cook)
-Add this melted chocolate mixture to the egg mixture and blend it in with the whisk.
- add the cocopowder, flour, vanilla essence and blend this well too
- add a pinch of salt n stir well
- Pour the batter into the cupcake rumkins and set it th fridge for 30 mins
- Bake for 12-15 mins in the oven.
- 12mins are up! ..take it out ..let it cool and then topple it over on to a serving platter.
- Drizzle some iceing sugar on top to decorate..makes it look simply picture perfect!

Serve it with some vanilla icecream topped with crunchy nuts! Wow!

Try it.. You will Love it! I am an advocate for it!

Mini Marshmellow Chocolate Mousse

Oh this Chocolate Mousse recipy is so lushes and delicious!.. I insist everyone must try atleast once and then you tell me if was wrong. Its is very easy and you can whisk up a fabulous dessert within few minutes!

Melt in a pot..
-150g of mini marshmallows
-50g unsalted butter
-250g chocolatechip
-4tbsp of water

Leave it aside to cool

whisk till firm

-250ml fresh cream
-1tsp vanilla essence

Pour the chocolate cream into this and blend well

Place scoops of this mousse into small glass cups

Decorate by sprinkling grated white chocolate on top

Refrigerate for 20-30mins to set.

John's Chilly Toast

Hey guys! whats for breakfast today??
Well I tried out my friend John's chilly Toast recipy. Its absolutly yum yum..yummy!
If you are tired and bored wth your normal toast.. add some spice to it. Try this recipy and send in your feedbacks!

Ingredients:


Bread slices
green chillies finely sliced
1 egg
a cup milk

Crack an egg into the milk and beat it well. Add the sliced green chillies.
Heat a frying pan with some butter or ghee.
dip n soak for 2 seconds the bread slices into the milk mixture and toast (both sides of bread) on the pan.

Thats all folks! Enjoy your spicy Chilly breakfast!
