Belgian Chocolate-Chip Mint Cookies


Every time I read out the words 'Belgian Chocolate' my mouth drools and I crave for it so bad till I make some for myself. I thought I was on a diet but I just could not resist these scrumptious little Chocolate Chip Mint Cookies. I would say.. Try it to believe it!

For those who have made cookies before this would be the basic ingredients except for that extra bit of love for Belgian chocolate and Mint. My special thanks to my cooking ideal Nigella Lawson for the original recipe, however I did improvise it to my taste.

Ingredients for Cookie dough:
150g butter - melted
150g jaggery (light brown sugar) - granulated
1 tsp vaniilla extract
1 egg
150g flour - sieved
25g cocoa powder
1/2 tsp baking powder
250g Belgian chocolate- broken into chips (or any chocolate chips)
3 mini packets of Belgian chocolate-mint flavor powder
1/4 tsp peppermint extract (Natural peppermint Extract)

Preheat Oven to 180*C
Mix in the butter and jaggery
Beat in the egg and vanilla extract, peppermint extract (I like it more minty hence I added this. You may omit it and use it when making the glazing)
(You could use the mixing blender for ease)
Blend in the flour, baking powder and cocoa powder a spoon at a time into the cream mixture.
Now fold in the chocolate chips into this mix.


Butter up a baking tray or use a butter paper to cover the inner part of the tray.
Place small scoop balls of this cookie batter on the tray using a spoon or ice-cream scoop. Do not worry of the shape. Make sure there is 2 inch gap between each scoop as it can melt a bit and flatten out as it bakes.

Bake in the oven for 10 - 12mins. (Make sure the chocolate chip does not melt..you can reduce the bake time)
Then take it out of the oven and leave it on the tray to cool for few minutes.



For Glazing

75g icing sugar
15ml cocoa powder -sieved
30ml boiling water
1/4 tsp peppermint extract

Mix all these ingredients until well combined. 
Serve on to a plate and drizzle in the Peppermint Glazing on top ;)!

Now sit back.. Relax .. and take a bite of this mouth-watering delite which just melts in your
