Seeni Sambol Hotdogs

Seeni sambol is a caramelized onion relish from Sri Lanka. Usual it is served with a slice of bread as a side dish.. but works well on hotdogs too.
There are many versions of how to make seeni sambol. This is the version my mom used to make me for breakfast. I made this reminiscing its taste and aroma I get by just thinking of it. Hope you enjoy it too.
Usually the traditional style of Seeni Sambol they put Maldive fish and Screwpine leaves (called Rampe in Srilanka). But this is a simple version of mine and its vegetarian.

Filling for 2 hotdogs:

1 large onion - chopped in slices
2 stem curry leaves
1 tsp dry red chilly flakes
1 tsp sugar

1 tbsp oil
salt to taste


Hotdog bread
cooked sausage (frankfooter sauages/keels hotdog sausages)
To Make Seeni Sambol Relish:
- Stir fry onions with oil in hot pan. 

- Add salt, chilly flakes, curryleaves and stir again. 
- Take the pan off the heat and add the sugar and stir again. 

- Cut the hotdog bun through the center (make sure its cut only halfway through the bread)

- Apply some chilly oil or butter and then spread some of the seeni sambol relish. 
- Place the sausage in it and then top it with some seeni sambol relish again.
