You can alter ths recipe wit any vegetables you like. I used..
This serves 4 people.
To chop:
red bell pepper
mushrooms
onions
crougettes
bacon
chicken ham
sauages
semi cooked potatoes
cheese shredded
herbs - parsly and thyeme
- In frying pan(which is oven suitable) add 1/2 chopped onions, drizzle in olive oil, sprinkle in salt and pepper. cook this till onions are soft.
- Add the rest of the chopped items ..except for the cooked potatoes...and leave it to cook.
- Now in a bowl.. add 8 eggs (2eggs/ person). beat eggs season wit a bit of salt n pepper.
- Add the potatoes and mix well
- Add some herbs (thyeme/corriander/ parsly)
- Add some grated cheeze
- Cook for 7- 8 mins
- Finally pour the beaten eggs ..n stir it in gently so that it evenly soaks in with the stir fry mix.
- Place this pan in the oven for 12-15mins till egg is done.

ps. vegetarians can skip the non-veg items.
