Kerala Meat Fry
My friend John who was my Manager at the time I was working at Krishna's Inn, Bristol, UK. He used to make this simple delicacy for me. Mind you..he is a brillient cook himself. He always used to cook up something special in the kitchen during restuarant closing hours. Well he taught me this.
This recipe was listed under the Chef's Specials in our Menu..So I recommend all of you to try it out atleast once ...because it taste absolutely fantastic!
Marinate 200g of cube sized chopped mutton for 10- 20mins with..
1tsp chilli pwdr
1/2tsp turmeric pwder
1tbp ginger-garlic paste
salt and pepper
- Semi-cook the mutton in pressure cooker or cooking pot with little amount of water.
- In a Wok.. stir fry 1 onion (slices), 2 green chillies (sliced). add bit of salt ..so onions will ooze out its sweet flavor.
- Add the semi-cooked mutton pieces. (keep the stock aside)
- Add 1/4tsp chilly pwder, turmeric pwder, garlic pwder
- Add 1tsbp of coriander pwder and garam masala
- drizzle in some soya-sauce, lemon/lime juice and some of the mutton stock. Stir well for 1 min.
- Add curry leaves, red/green bell pepper(capsicum) chopped in chunk sized pieces
- Add 1tsp of pepper.
- Stir fry till the mutton is cooked well ..occassionly adding the stock of the mutton!
Serve hot with some parathas or chappathi ;)
