Chillidog

I get this nostalgic feeling of the days my Amma (mom) used to pack delicious hotdogs into my school lunch box. When it was time for lunch break, I used to rush to the back of my classroom and enjoy the hotdogs all by myself. I know, pretty selfish of me but it was too yummy to share.

I managed to replicate that very same recipe of my mother's hotdogs and I call it - Chillidog!
I do make these quite often as it is easy to make and I am very fond of it. I used salad leaves in this recipe to my taste, but you could omit it and make just the chillidog and the chilli-onion relish instead.

Filling for 2 hotdogs:
1 large onion - chopped slices
2 table spoon Hot& Sweet chilli sauce (Maggie's Hot& Sweet chilli Sauce)
1/4 tsp chilli powder (or hot chilli sauce)
1/2 tsp garlic paste
salt to taste
Hotdog bread
Set of six medium sized sausages (frankfurter sausages/keels hotdog sausages)
Salad leaves for garnish (optional)

To Make:
- Grill or stir fry the Sausages and leave aside.
- In a hot pan, add oil and stir fry onions.
- Add garlic paste, chilli powder(or hot chilli sauce), salt to taste.
- Add the hot and sweet-chilli sauce.
- Stir until the onions are semi-transparent.
- Cut the hotdog bread through the center.
- Place the salad leaves in the bread.
- Spread some of the chilli onion relish over it.
- Place the sausage in the bread and then top it with some more chilli onion relish again.
- Serve on plate

This is a great snack to enjoy your friends and family :)!

Sweetchilli Chicken Sandwich

Fast foooooood ..yet spicy and yummy. I have done several types of sandwiches and I blogged in my favourite ones. This is one of them. It would not take any more than 5mins of your time (if you have everything ready).  For VEGANs they could use a vegan alternative (Tofu or Paneer or Quorn) instead of chicken and still enjoy this great snack.

- Stir fry onions in sesame oil
- Add garlic paste, onions jalapeno pepper and salt to taste.
- Stir for 1min and now add the chicken. Stir till cooked
- Add sweetchilli sauce and blend well with the chicken. (pour 2 Tbspn of water if you like it saucy)
- Cut the burger bread in half.
- Apply butter and toast the burger bread in a grill.
- On one half of the bread, place the salad leaves and apply the sweet chilly chicken stir-fry on
   top.
- If you want it more spicer, garnish with more slices of jalapeno pepper on top like I did.

Sichwan Style Sweet & Sour Prawn

Initially, this was my attempt at Ching He Huang's sweet and sour prawn recipe. Since I did not have some of the ingredients with me, I had to improvise with what I had in stock. However, it did turn out good and tasted just like the sweet and sour prawn take-outs my cousin Neetha and I used to have from one of our favorite Srilankan Chinese restaurants. So, this one is for you couz!

Ingredients:
- 200g Prawn washed and deviened
For marinating:
- 1/2 tsp Paprika powder
- 1 tsp vinegar/ lime juice
- salt to taste

Marinate the prawns with the above ingredients. Leave aside for 5mins.
Deep fry in groundnut oil/ sunflower oil. (Fry for one min only so that the prawn retains bit of  its soft texture)
Place aside on plate

For sweet and sour sauce
- 2 Tsp ground nut oil ( I used sunflower oil and added grounded peanut in the wok)
- 5 shallots chopped in half
- 2 tsp Sichwan peppercorns
- 2 tsp ginger garlic paste
- 1 tsp of lime
- 1 jalapeno pepper(chilli) or 2 green chillies chopped finely
- 5 Tbsp Ketchup mixed in 200ml of water and 1tsp of cornflour (this is to thicken the sauce)
- 1 cube of jaggery or you can use 1 Tsp brown sugar
- salt to taste

 For Garnish
- 2 spring onions chopped finely
- few leaves of coriander chopped

Wok on and oil in.
Add sichwan peppercorns, ginger-garlic paste, onions, green chillies and stir fry for a minute
Add the jaggery and stir until it melts
Add salt to taste
Add the ketchup mixture
Add the lime juice
Stir for 2mins
Take it off the flame
Pour this sauce on top of the fried prawns.
Garnish with spring onions & coriander

And so, there you have it. Sichwan style sweet and sour Prawns.
Enjoy!

Belgian Chocolate-Chip Mint Cookies

Every time I read out the words 'Belgian Chocolate' my mouth drools and I crave for it so bad till I make some for myself. I thought I was on a diet but I just could not resist these scrumptious little Chocolate Chip Mint Cookies. I would say.. Try it to believe it!

For those who have made cookies before this would be the basic ingredients except for that extra bit of love for Belgian chocolate and Mint. My special thanks to my cooking ideal Nigella Lawson for the original recipe, however I did improvise it to my taste.

Ingredients for Cookie dough:
150g butter - melted
150g jaggery (light brown sugar) - granulated
1 tsp vaniilla extract
1 egg
150g flour - sieved
25g cocoa powder
1/2 tsp baking powder
250g Belgian chocolate- broken into chips (or any chocolate chips)
3 mini packets of Belgian chocolate-mint flavor powder
1/4 tsp peppermint extract (Natural peppermint Extract)

Preheat Oven to 180*C
Mix in the butter and jaggery
Beat in the egg and vanilla extract, peppermint extract (I like it more minty hence I added this. You may omit it and use it when making the glazing)
(You could use the mixing blender for ease)
Blend in the flour, baking powder and cocoa powder a spoon at a time into the cream mixture.
Now fold in the chocolate chips into this mix.

Butter up a baking tray or use a butter paper to cover the inner part of the tray.
Place small scoop balls of this cookie batter on the tray using a spoon or ice-cream scoop. Do not worry of the shape. Make sure there is 2 inch gap between each scoop as it can melt a bit and flatten out as it bakes.

Bake in the oven for 10 - 12mins. (Make sure the chocolate chip does not melt..you can reduce the bake time)
Then take it out of the oven and leave it on the tray to cool for few minutes.

For Glazing

75g icing sugar
15ml cocoa powder -sieved
30ml boiling water
1/4 tsp peppermint extract

Mix all these ingredients until well combined.
Serve on to a plate and drizzle in the Peppermint Glazing on top ;)!

Now sit back.. Relax .. and take a bite of this mouth-watering delite which just melts in your
mouth! To all my cookie and chocolate lovers out there.. don't miss out on this delicacy!
