Seeni Sambol Hotdogs

Seeni sambol is a caramelized onion relish from Sri Lanka. Usual it is served with a slice of bread as a side dish.. but works well on hotdogs too.
There are many versions of how to make seeni sambol. This is the version my mom used to make me for breakfast. I made this reminiscing its taste and aroma I get by just thinking of it. Hope you enjoy it too.
Usually the traditional style of Seeni Sambol they put Maldive fish and Screwpine leaves (called Rampe in Srilanka). But this is a simple version of mine and its vegetarian.

Filling for 2 hotdogs:

1 large onion - chopped in slices
2 stem curry leaves
1 tsp dry red chilly flakes
1 tsp sugar

1 tbsp oil
salt to taste


Hotdog bread
cooked sausage (frankfooter sauages/keels hotdog sausages)
To Make Seeni Sambol Relish:
- Stir fry onions with oil in hot pan. 

- Add salt, chilly flakes, curryleaves and stir again. 
- Take the pan off the heat and add the sugar and stir again. 

- Cut the hotdog bun through the center (make sure its cut only halfway through the bread)

- Apply some chilly oil or butter and then spread some of the seeni sambol relish. 
- Place the sausage in it and then top it with some seeni sambol relish again.

Egg-Bacon Muffins

My Egg-Bacon Muffins.. Now this you gota definetly try!!

If your a vege ..you can use grilled crougettes ..jus make sure you use muffin cases to layer the crougette strips:)

Well.. getting down to cooking it..

-Fry some bacon strips till they slightly turn brown (not too crisp).. and layer your muffin tray with it.. so that each muffin cup is fully covered in a layer of bacon.


- Break in the one egg to each layered muffin cup.
- sprinkle in the following ingredients for additional flavour...
- chopped herbs(chives, dill, basil, organeo)
- paparika powder (optional)
- salt n pepper to taste

Finally sprinkle in some shredded cheese on top to cover it.

Bake this for 15 mins ..at 180*

Kabeesh!! your Egg-Bacon Muffin is ready to enjoy!



Seetha's Roast Chicken


AAhh !! ..my all time favorite.. Roast Chicken! I have finally done it..i have cracked the recipe for that perfect Roast Chicken!!
I have been to the pubs..resturants..jus craving for a roast chicken. ..well.. Not anymore..buwhahah!

I am sure this picture of my juicy chicken roast is making you want to to make it an have slice. hehe :)!

Well.. its took almost two hours to cook and get this result. Yep.. I slow cooked it in the oven. They say .. patients is a virtue!!

First of all you need a Large Chicken washed. Then the marinate:

- Herbs ( sage, parsley, rosemary and thyme ) .. NB. you can use any herbs of your choice to your taste. But these herbs i used makes all the difference.

- 1tbsp red chilly powder or paparika powder ( optional)
- 1tbsp of salt
- 1tbsp semi crushed pepper corns
- 1tbsp of garlic powder
- 1tsp of ginger
- 1/2 juice of lemon (the other half to stuff into th chicken)
- 1/4 cup of Red wine (optional)
- 1/4 cup of olive oil

Mix all these ingredients together into a paste and marinate the chicken well. Leave for 10mins so that the herbs and spices soak well into the chicken.

- Preheat the oven to 200*C
-In an oven dish, Pour some olive oil and spread out some sliced onions (1 large onion) , Potatoes,
carrorts...( and any vegetables you like).

- Place the marinated chicken on top of the onions.
- Stuff the chicken with any left behind marinade and some of the sliced onions. Finally seal the stuffing with the other half of the lemon.
- Oven slow cook the chicken for 40 mins. Then turn it over to slow cook for another 45mins.
- Turn of the oven. Leave the chicken in the oven for another 10 mins.

..And there you go the Perfect flavorsome Roast chicken ever!! :)!

ps. Dont worry if you dont get it right for the first time. Nothing is perfect without a little practice.

Deviled Eggs



This would be an excellent starter menu dish for any cocktail party /dinner party you planning to have. Its very easy to make that I see you have no excuse not to give it a try.

Do you know how to make that perfect boiled egg?? Well let me tell you how..

In a cooking pot place the eggs (4 eggs)
Pour water at normal room temp. into the pot and cook in high heat
once the water starts to simmer and boil ..place the air tight lid on the pot and turn off the cooker.
leave the eggs for 17mins to cook.
Then pour out the hot water and pour in some cold water.
Once the eggs cool.. your eggs are ready and also perfect boiled

Well, now for the deviled eggs ...

Cut the boiled eggs in half and scoop out the yorks into a differnt bowl.

Leave the whites aside on a serving plate

Mash the yorks into a paste like form..then add the followng to your taste and measurement..
-hotchilly sauce
-chilli powder(optional)
-scoop of cream cheese / cheese (optional)
-scoop of Mayonise
-finely chopped herbs (i used ..dill, chives)
-salt and pepper to taste

blend all this into a fine thick paste

Using a decorative star-shaped nozzle you can fill the boiled eggs on the plater with this filling.

Garnish with jalapeno-chilly in sweet syrup (chilly soaked in melted sugar) and dill (herb)

Kerala Meat Fry



My friend John who was my Manager at the time I was working at Krishna's Inn, Bristol, UK. He used to make this simple delicacy for me. Mind you..he is a brillient cook himself. He always used to cook up something special in the kitchen during restuarant closing hours. Well he taught me this.
This recipe was listed under the Chef's Specials in our Menu..So I recommend all of you to try it out atleast once ...because it taste absolutely fantastic!

Marinate 200g of cube sized chopped mutton for 10- 20mins with..
1tsp chilli pwdr
1/2tsp turmeric pwder
1tbp ginger-garlic paste
salt and pepper

- Semi-cook the mutton in pressure cooker or cooking pot with little amount of water.
- In a Wok.. stir fry 1 onion (slices), 2 green chillies (sliced). add bit of salt ..so onions will ooze out its sweet flavor.
- Add the semi-cooked mutton pieces. (keep the stock aside)
- Add 1/4tsp chilly pwder, turmeric pwder, garlic pwder
- Add 1tsbp of coriander pwder and garam masala
- drizzle in some soya-sauce, lemon/lime juice and some of the mutton stock. Stir well for 1 min.
- Add curry leaves, red/green bell pepper(capsicum) chopped in chunk sized pieces
- Add 1tsp of pepper.
- Stir fry till the mutton is cooked well ..occassionly adding the stock of the mutton!

Serve hot with some parathas or chappathi ;)

Reggae Reggae Chicken




Aaahh the Reggae Reggae chicken.!! ;) Need I say more?? ...the name of this dish itself just makes me flamboyant and cheerful.

How it is made:

-Marinate the chicken with some barbeque sauce, chopped parsly, 1/2 tsp ginger-garlic paste, 1/4tsp chilli powder, salt and pepper. Leave it aside for 10-20mins.
-In a cooking pan add some olive oil and sort 1 chopped tomato, some chopped spring onions.
-Drizzle in some balsamic vinegar ..sort again.
-Stir in the marinated chicken and leave the chicken to cook in low heat(slow cook the chicken)..for about 40 -45 mins. stir in occassionly.
-Add some chopped basil and rosemary leaves for that aromatic flavor

Serve hot with some pitta bread (soft round bread) ;)

Chicken Clubsandwich



Ofcourse everyone knows how to make a sandwich. I was craving for chicken sandwich the other day and although i have never made a Club chicken sandwich..I just gave it a try.
  1. On 3 slices of toasted bread spread some mayonise.
  2. One first toast..layer on top wit some fresh lettus ..then some cooked smoked chicken slices and cover with the second toast.
  3. then layer on the second toast with some freash sliced tomatoes, bacon and sliced pickle, some more lettus and cheese..and cover with third toast.
  4. Then gently press down the sandwich and cut it evenly .
  5. Pierse a cocktail stick through it to hold it together.

Spanish Fritatta


You can alter ths recipe wit any vegetables you like. I used..
This serves 4 people.

To chop:

red bell pepper
mushrooms
onions
crougettes
bacon
chicken ham
sauages
semi cooked potatoes
cheese shredded
herbs - parsly and thyeme

  • In frying pan(which is oven suitable) add 1/2 chopped onions, drizzle in olive oil, sprinkle in salt and pepper. cook this till onions are soft.
  • Add the rest of the chopped items ..except for the cooked potatoes...and leave it to cook.
  • Now in a bowl.. add 8 eggs (2eggs/ person). beat eggs season wit a bit of salt n pepper.
  • Add the potatoes and mix well
  • Add some herbs (thyeme/corriander/ parsly)
  • Add some grated cheeze
  • Cook for 7- 8 mins
  • Finally pour the beaten eggs ..n stir it in gently so that it evenly soaks in with the stir fry mix.
  • Place this pan in the oven for 12-15mins till egg is done.

ps. vegetarians can skip the non-veg items.

Stuffed Portobello Garlic & Cheese Mushroom


This would be my usual starter at Pizza Hut.. jus love it. I have had it sooo often that I cracked the recipe for it..and now I make it at home at my own leisure. ;)

You will need..

-Two portobello mushrooms (peeled and cleaned)
-Pull off the stem gently and marinate it in a mixture of olive oil with chopped parsly and pinch of salt and pepper.
-Place it on a buttered or olive oil spread oven tray.
- For stuffing .. mix some shredded morzeralla cheeze( or any cheese u prefer) , 1/2 tsp garlic powder, chopped herbs( thyme,rosemary/basil/corriander/ mint), 1tsp balsamic vinegar, 1/4 chilly powder.
- Sprinkle in this mixture as stuffing. Drizzle some olive oil on top, brown sauce or balsamic vinegar.
- In preheated oven.. cook the mushrooms for 15mins at 200*c.

-serve on top of brown sause with some salad.

Spicy Aromatic Chicken Bacon Wraps


This is a perfect main course meal on any special occasion for your loved one. Its spicy,sweet and simple. If you want to impress anyone ..try this recipe out and you will definetly win their heart.

ps. If its vegetarian.. try use quorn instead of the chicken and 'grilled courgettes strips' instead of the bacon strips.



Marinate 2 thigh piece of chicken with

- 1/4 tsp chilly powder
- sprinkle some salt, pepper
- 1/4 tsp ginger powder
- 1/4tsp garlic powder
- 1 tbsp of mango juice (or any fruit juice)
- Finely chopped herbs ..dill, basil, thyeme, chives
Leave it to marinate for few hours.
Wrap the chicken with bacon (pork) strips..also spreading in some of the marniate on the bacon strips.
Oven bake the chicken in high heat (240*c) for 40mins..fliping it at intervals so that both sides well done.
When your chicken is done and serve with some salad and sweet chilly sauce.

French Toast Omelette


I call this 'two in one' . What if you feel like having both the flavor of french toast and an omelette. You wouldnt believe it.. but its really easy to make ..especially if you have to rush off to work and have very little time to make some good breakfast.

Ofcorse each one has their unique preferences on how they want their omelette or toast.. so you can vary the ingredients to your taste. ;)


- In bowl crack in two-three eggs
- Add 1/2 tsp of cinnamon powder
- Add 2 tbsp of sugar
- Add 2 tbsp of Milk
- Add 1/2 tsp of vanilla essence
- pinch of salt
- Beat well. Soak a piece of bread gently on both sides in this mixture. (Dont soak for too long)
- heat a pan with some butter
- Place the soaked bread on the pan to toast. and immediately pour in the egg mixture as well ..covering the bread fully. Cover the pan with lid
- Once the botton side of omelette is done.. flip it and cook the top side.
-Sprinkle in some caster sugar(optional) ..Serve Hot. ;)
